Since banking apps are important the quick answer is that you need a new phone . In another year that iphone 8 will be a very old phone as it came at 7 years ago

Upgrading an iPhone 8 Plus to iOS17:

A. You can't.  The iPhone 7 will only install to iOS 16.7. See here: iPhone models compatible with iOS 17 - Apple Support. And, for the note, even if you could update, only the latest compatible version will install.


So, what to Try:

B. Update Using a Computer:

Have a Computer Handy? If so, try using a computer to update. Use my User Tip Update your iPhone Using a Computer - User Tip. If any updates are availabe, they will install, sure enough

It's Time for a iOS17-Compatible iPhone.

Take this as a good reason to upgrade. Apple is proprietary --and they typically let a device go for 7 generations until is is no longer supported by updates. With no updates available, a bank would not want its customers to be insecure --updates are all about security. See here: iPhone Models Compatible with iOS 17 - Apple Support
