Cannot update my apple watch and pair it
Is refuse to update and pair it will say estimating time and somthing

If the update request shows a time estimate it is attempting to make the update happen. The important point (you didn't tell us yet) is what happens after this stage, and what you see to make you think the process might have failed.
Please post back with details of exactly what you do with your finger and what you see with your eyes. With more clues we might be able to offer better advice.
