Color printing
I need to print in colour but I can't see any colour options in the menu. I already tried clicking on everything but it just isn't there.

Update your Monterey 12.1 to the current 12.6.8 and for your particular printer, visit its vendor site and get the printer driver that vendor offers for macOS 12. The ability to print in color or b/w will be on that printer's print panel.
