I want to recycle an old (est. 2004) iMac. Can I just bring it into an Apple store to do this?
This an old device that no longer works. Can't find serial number, etc. Should I bring it to Apple or just dump it?

As we rare not Apple but other end users, it is best to check with the store you plan to use. I've seen posts here where users found some stores that accepted mobile devices but not computers.

Yes, you can take it into any Apple store for recycling. You'll have to sign a release but that's all. But before you do you should prepare it according to this Apple document: What to do before you sell, give away, or trade in your Mac - Apple Support.
If you can't get into the Recovery volume because the Mac is too old try connecting it to your current Mac in Target Disk Mode and use the current Mac to erase the drive. Don't worry about installing the system if you're going to recycle it.
