I've tried multiple times to change my apple ID e-mail because the old one doesn't work. When I try to change the e-mail it says that the email doesn't exist. I tried this on my iPhone and on my computer and they both say the same.

Apple support have an article online (link below) that may help you change the Apple ID email online:
If you no longer use the email address that's associated with your Apple ID, you can change it.
You won’t lose access to your contacts, purchases, or other account information
