Restore backup

I have got a new IPhone 14 and managed to get what i thought was everything across from my IPhone 11. I did a backup of my IPhone 11 and then started to delete things like email accounts, facebook etc and also deleted a bunch of ntoes which i thought had transferred to the new phone. Turns out it didn't transfer! I have also done the permanently delete thing. I know I've been a little hasty! I want to try to restore the backup of the IPhone 11 back to this phone without it affecting my new IPhone 14. I can't see a "Restore backup" option anywhere!
