I wonder if anyone can help with this. The problem occurs on iPad and Macbook.
When I open the sample documents provided in Pages such as
letter when I try to select one paragraph all the paragraphs in the body are selected. I want to select part of 1 paragraph.
Does anyone know a solution please?

All of those paragraphs are in the same placeholder text block and selecting anything in that text selects all of it. You simply enter your own text to replace that boilerplate text that Apple uses in its templates.
