Why can’t I pair my Apple Watch with my iPhone? I’ve had both for a year and have been unable to do that the entire time. Thus, I can’t update my watch not to mention pairing with my phone.

If you inderdeed have an iPhone X And you’re still on iOS 14, it is time to upgrade to iOS 16.6
If the Watch is running a newer watchOS, it is impossible to pair if you’;re still on iOS 14.
To update your iphone GO. To settings>general>software Update and make Sure to turn off low power mode and Connect your iPhone to a WiFi network
