I want a step goal for the day. Can I change stand goal to step goal? I don’t care about stand goal.

No, you can't change the stand goal for a step goal. Apple doesn't have any provision for a step goal. However, there are lots of third-party apps that will allow you to set one and put a complication on the screen of your watch. One I've used is StepsApp.
