Does selecting to not transfer apps and data eventually replace old backups that one might want to use in the future?

My iPhone 11 Pro was stolen. As a temporary solution, I have an old iPhone 7 and plan to buy the iPhone 13, but only in a few months' time. I can't restore the last backup from the stolen iPhone 11 to the old iPhone 7, because the iPhone 7 does not support iOs 16.5, but I would like to restore the old backup to the new iPhone 13 once I get it in a few months' time. If I add the iPhone 7 to my AppleId and choose to not transfer Apps & Data to the iPhone 7, will I be able to restore the apps and data from my last iPhone 11 backup to the new iPhone 13, or will the backups from the iPhone 7 replace those backups and cause me to lose all the apps and data that I had on the iPhone 11?

Are you referring to a backup that's stored in iCloud or that's stored on a computer?


While the act of not restoring the data to the older device shouldn't directly cause any issues, if you're referring to an iCloud backup it may no longer be available if the time between it's last backup and you getting your new device exceeds 180 days.
