Apple Watch not creating scheduled reminders

I’ve previously used my Apple Watch to schedule reminders using Siri, by saying something like “hey Siri, remind me in an hour to switch the laundry” and it worked flawlessly. Within the past couple of months though, I’ve been getting an error only when initiating from the Apple Watch that says, “Uh-oh, something went wrong. Please try again.” Sometimes this follows with the reminder actually being added, but not always. And when I initiate from my iPhone 13 Mini it works just fine. I have restarted both devices, unpaired the Watch, IOS restored my phone and the issue still happens. I’m updated to the latest software and this happens whether I’m right next to my phone in Bluetooth, or if I’m on a walk a mile away from my phone. I also think it’s important to note that this only happens with scheduled reminders that I put a specific time to. When I want to add something to a grocery list, it works just fine.
