Notes - version history - does it exist and how do I access it...?

I don't even know how it happened, but I deleted a whole long letter I'd been drafting in Notes. Couldn't see an undo button. I logged into the Cloud and the note was there for a whole 2 seconds before it synced and all the text I'd spent hours crafting and editing was gone. I've googled about 'version history' hoping I could go back one update, and some places say yes it can be done, long hold, right-click... but not seeing anything on my phone or desktop that says 'version history' when I do either of these things...

Is all lost and sync overwrites rather than updates?
