Changing hair color on emojis

When texting I want to personalize the two people in an emoji. Both have blonde hair. I want to make one blonde and one dark hair when I hold down the emoji several options come up one side, grayed out the other side the blonde emoji. Then nothing happens.

Can Apple allow emojis to default to preferred skin tones? Can Apple please, please allow users the ability to have emojis default to a person’s preferred skin tone? It’s a bit of work to have to set each one and doesn’t work with predictive texts.
