How to disable Numbers as the Mac Default spreadsheet

I'm a long time and proficient Excel user, and have Office 365 installed on my Mac. How do I prevent Numbers being the default spreadsheet when I download CSV files. As it works now, I must export the numbers version into Excel, a wasted step.

Windows users can't edit my Numbers spreadsheet exported to Excel I exported a Numbers spreadsheet to Excel. A relative on Windows says she cannot edit the file. I also find that I can’t edit the Excel version in Numbers. But I of course can edit the original Numbers file. Is there something to unlock?
