Updating an iPhone X or Cellular:

You can't. Overview my User Tip: Use an iPhone 12 or later, that is using 5G, in order to update over Cellular - User Tip. So, you can try doing so using a computer: Computer:  Update your iPhone Using a Computer - User Tip

If you do indeed have an iPhone X, it is a 4G iPhone and to be able to update using mobile data, you MUST own an iPhone 12 or newer, which has 5G cellular service. On an iPhone X, you can only update when connected to Wifi.
