Apple watch stolen
Hello, guys I have lost brand new sealed apple watch ultra, I wanna know can the thief use it? What should I do? I have full coverage on it? Should I just apply for new one?

they do offer some special apple care+ one has to pay extra for iPhone Theft and Loss Claims - Official Apple Support
if you did not pay for the apple care+ theft and loss thing then you should contact your normal insurance company to hear about cover.
