Is there a way to change the colour of the highlight selection?
like when you click on a square, and it's outlined to show you it's selected. I find it quite hard to see, especially on a white background.

Go to System Settings > Appearance and experiment with changing Accent Color and Highlight Color. You might also try changing from Light to Dark mode.
