After trying for a while, I was finally able to run a new fastest 5K today, but was disappointed when I noticed that the corresponding medallion did not update.
The fitness App registered my workout as a 5K run, as I got the normal 5K Medaillon.
Is there a way to fix this issue? I would really like to keep track of my fastest 5K time.

If your new fastest 5K run did not register in the Fitness app, check to see if the date needs to be manually edited in the Health app:
Manage Health data on your iPhone, iPod touch, or Apple Watch
If the achievement doesn't register after doing this and restarting your iPhone and Apple Watch, reach out to Apple for more help with this.

I spoke to Apple Support just after posting, they went through everything with me, they then went off to the tech guys and we arranged a callback for a week later.
Result - tech guys are aware of the issue and should be sorted in the next big update
Mine is exactly the same!
showing my fastest last October but I have done several faster this year! I did one yesterday 10 mins faster
tried everything but still not updated
Mine has updated but it went further back than I was expecting!
it’s showing mine from July 2021, this is my fastest ever 5k and before I went out injured, I’m highly unlikely to get anywhere close to this going forward
my 10k was also updated but thankfully not at my PB as I used a different 3rd party app to record so this may have been why.
Did you have any luck fixing it?
I was hoping it would fix it with the last phone and watch update, but it still has the wrong time for the fastest 5k
