Watching some WWDC videos are always fun and you learn what's coming to iOS and iPadOS. Obviously going back the features are already there, but you still learn more about them!
You should check out - https://training.apple.com/. It's not specific to iOS and iPadOS, but you can either learn App Development or IT Training (so macOS too).
