I can’t access any apps and I noticed under subscription it lists apps I did not even use and thought it deleted
I want to delete old subscription that I did not use or ever use

If you want to cancel a subscription from Apple - Apple Support
Note that deleting an app has nothing to do with cancelling the subscription. If you delete the app(s) you still have to cancel the subscription or you will continue to be charged.
