I lost my Apple Watch and it was not setup on finding my iPhone app. However, it is locked with a passcode. If I unpair it will it reset the watch and erase my info?

If you cannot find it in https://icloud.com/find it is no longer in your account.
To be sure check in iPhone Settings, [your name], is it in the list of devices at the bottom? If not then it has gone from your control and you may as well unpair it (if you can)

You can erase it in Find My or in
https://icloud.com/find
but if you then remove it from your account it will be a gift to the finder.
The finder can never access your data if it has a passcode set. Do not remove it from your account unless you feel generous.

It is doing no harm to keep it paired. You can pair a replacement in addition.
I would leave it a year before killing it off.
