My sleep time is in the wrong time zone

Is the time zone correct on your paired iPhone? Is it set to automatic or did you set up your time manually? You can read more about how to change your time zone here: If you can't change the time or time zone on your Apple device - Apple Support


Note the section titled "Learn more about time settings", as it contains:

• Learn about time settings for Apple Watch, including how to set up 24-hour time on your watch and how to set the watch face ahead of the actual time. 

As mentioned above, verify that the time wasn't set ahead on your Apple Watch:

How to set your watch face ahead of the actual time
You can set the time shown on your watch face to appear ahead of the actual time. Your alarms, notifications, World Clock, and other times will still match the actual time. 
1. Open the Settings app on your watch, then tap Clock. 
2. Tap +0 min. 
3. Turn the Digital Crown and choose how many minutes ahead to set your watch.
