Your iPhone would update apps automatically or manually (through they App Store app), based on compatibility with your version iOS.
Some apps and app versions require a later version iOS. You wouldn’t be able to use these versions, until you update iOS or get a device with a compatible version OS.
iPhone 7 can be updated to iOS 15.x (but not iOS 16.x). Use that for best app compatibility.
