Why does not email from addresses designated to go to Trash not sent to Trash?

You need to apply the rules for any changes like that to happen. They typically don't happen automatically. Go to Mail menu -> Preferences to adjust the rules in the Rules section. And then go to Message menu and hit apply rules.
