The standard color for spelling aberrations or missing words is red in Pages and MS Word. The latter uses blue for grammatical mistakes and to be honest, I have deliberately copy/pasted several grammar flawed sentences into Pages and the Pages grammar check ignores all of them, when Word or Grammarly do not.

So, unlike Pages '09 that used a green underline for grammar missteps, I cannot provoke Pages v13 to flag any, so don't know what color it uses for that purpose.

There is no setting in MS Word or Pages to change those correction oriented colors.

The proper highlight color from a word processing perspective is changed via the ⚙️v panel > Text Background entity. For changing the tracking Insert menu > Highlight color, one visits View menu > Comments & Changes > Author Color.
