Can I charge the Apple Watch beyond the time it reaches 100 percent, for example I go to bed to charge the Apple Watch a few hours after it reaches 100 percent?

Yes you can. Your watch cannot be overcharged, so leaving it plugged in at night, all night is not harmful and is actually the recommended way to charge your watch. I do recommend you have Optimized Battery Charge turned on in Settings > Battery on your watch.
