I am running Quicktime Player Version 10.5 (1154.4.2). Is it the latest?

yes, that is the latest. and when you update / upgrade macOS, QTP will be automatically updated along with it.

I'm running QTP 10.5 on a MBP 2019 with Sonoma.

QT works fine for playback, but I need to record a new movie and I'm getting a "this operation could not be completed" error message. What can I do?
