Assuming that you are using iOS 16.x, the option to tap Edit and then select Show Recently Deleted will not even appear unless there are messages that have been deleted within the last 30 days.
As a test, delete a recent message that is not that important to you.
Tap Edit, then Show Recently Deleted will now appear, so you can now see the message that you just deleted, along with an option to Recover the message.
Note that any messages in Show Recently Deleted will be automatically and permanently deleted after 30-33 days.

Sure that you have iOS 16 installed? Settings > General > Software Update
This has worked for me on the phones here since day one of installing iOS 16. Still working here. On a forum search, I cannot find any other reports from users about this option not working as advertised.
So, I can't duplicate the issue to find a solution. Maybe another user can help.
In the messages app, tap ‘Edit’ in the upper left corner, then tap “Show Recently Deleted”.
The option of show recently deleted doesn’t come up?

If you are using iCloud Syncing for Messages, they are not part of your back up at all.
Are you sure you're using iOS 16? Go to Settings>General>About>iOS Version. What does it say?
