Mac mail font is stuck on Times since updating to Ventura last week. Anyone experienced this? I’m on Mac Mini M1 chip. Default font is still showing as Century Gothic and in signature but appears as Times when I compose an email and in signature? Any help much appreciated

Have you just tried to re-highlight the font in the signature and change it to something else then back to what you prefer?
Or try doing a safe boot that will run various system diagnostics and repair things it finds wrong.

Try changing the font in Mail's Fonts & Colors setting pane:
Thx yes tried all the obvious font settings, default still shows as Century Gothic but not in practice?! Can’t even change font within an email. Will try safe boot
