Renaming a Mail Box on an iPhone:

1. Go Here: Organize eMail in Mailboxes on iPhone - Apple Support
2. Scroll to: Organize your mail with mailboxes
3. As it Reads: "Rename a mailbox: Tap the mailbox, then tap the title. Delete the name, then enter a new name."

In the Mail app While viewing an email list:

"Rename a mailbox: Tap the mailbox,

then tap the title.

Delete the name,

then enter a new name".

What are the other instructions your speak of? What's the source of these?

Inbox is the name is the Inbox --it cannot be changed.

Try tapping the Mailbox in the Mail app itself.

Changing the Inbox Name:

This mailbox is the home of all folders, and is the location where all incoming mail that is not filtered to go elsewhere will go.
