Sound Recognition requires the updated Home architecture So you need to upgrade to that first, then it will prompt you to set this up. All devices must be running the latest OS for the home architecture upgrade. Any devices not using the latest won’t be able to use the home app to control Home on that device.
If you can find a YouTube video of this sound and play it near a HomePod to test. Once it hears the sound you get a notification on your device that kitchen homepod (or whichever) detected a smoke alarm . See if this ADT sound works: https://youtu.be/Tj5Xvx99NKQ
If you think you have set it up, you could test a smoke alarm sound from YouTube to verify set up is complete. I’m not sure if it detects the ADT sound
