It doesn't look like there is currently a way to sort the built-in "Recents" album generated by iOS in your Photos app. We would encourage you to leave feedback on changes you would like to see in future iterations of iOS right here: Product Feedback - Apple. We can't say that this will be included in a future update but that is definitely going to be the best way to ensure that your opinion on this functionality is heard by the appropriate team.
In the meantime, another option to consider would be creating a custom shortcut in the Shortcuts app. This shortcut could take your latest photos and put them into a separate photo album. This would enable you to automatically move your latest photos to an album you create titled "Recent Photos" for example. Since that would be a user-created album, you would have the option to sort those photos from oldest to newest. You can learn more about Shortcuts right here: Shortcuts User Guide - Apple Support
