In-Game Mic Issue Issue: Once the mic is turned on in game the sound of game drastically reduces and teammates voice goes much higher. Also, if you’re recording a gameplay the sound will be captured until the mic is turned off….once you turned on the voice it won’t record the game sound. There were no such issue in older version i.e iPad OS 16 but it has came up in iPad OS 17 Game: CODm Device: iPad Pro (11-inch) (4th Generation) from iOS 16 to iOS 17

Most likely because that sound is copyrighted. Screen recording captures only sound from the microphone, not from apps.
