How do a turn on the certificate trusted settings on my iPhone

You don't. Certificate trusts cannot be turned on or off. They are just there and used when required. There is no need to turn anything on.

How do I update/change Certificate Trust Settings? I have an iPad Air (15th gen), which is fully updated. I want to see what certs. are installed, but I just see numbers and no link for editing.
