Anyone using multiple projectors to display screen projections and getting pixelation/distortion on one or more of the screens? I can connect all devices to a Dell laptop and not have the same problem and can connect to old Mac 27 inch 2011 model and not get the same issue as well. Seems to point to the Mac Studio as the problem, but Apple support was no help.

There is nothing inherent is adding more displays that would produce pixelation on any display.
What can influence this is cables that are not adequate or are too long for the resolution being displayed.
Dell never did anything about standards -- set it to what you whatever you choose and let it rip.
More recent Macs are much tougher on enforcing cable quality standards.

The Mac studio introduced in 2020 has an HDMI port capable of HDMI 2.0, which can run up to 4K at 60 Hz, BUT: it also has the ability to read any errors that are detected at the display, as reported back on the EDID slow speed side channel.
Errors might occur is your cables are not quite good enough. In your case I presume you are not running the extender beyond its specs, but what about the lead-in and lead-out cables?
HDMI cables you want for HDMI-only Displays (higher resolutions than 720p TV sets) are marked as Certified with an anti-counterfeiting tag and are labeled:
"Premium High Speed HDMI cable" or that + "with Ethernet" --OR--
"Ultra High Speed HDMI cable" or that + "48G"
Cables with No Certification tags are good for your standard 720p TV set, and not much more.
Using CAT6 cable with HDMI to CAT6 adapter/extender. Distance is well within the limitations... 100 ft. or less.
Resolution on the Projectors are standard HD, no 4K.
I am new In Apple in one suggestion to solve is to try to adjust Screen Resolution to highest setting or contact Apple care
