My "Send Later" email seemed to simply vanish after I pressed Schedule. So I added a Send Later mailbox to my Favorites and ran a test. The Send Later test email also simply vanished. It never appeared in the Send Later mailbox or in any other mailbox. (MacBook Air M2- Ventura 13.2.1)

UPDATE: I tried using the Send Later function on Gmail and it worked like a charm. This confirms for me that the problem is with Mac Mail (and not with me!)
