You cannot change the way the recipient of your call sees your call. If the recipient has your contact information encoded with name and picture on their phone, then the recipient will see this.
You can change your name and profile picture that people see when you send iMessages and participate in iMessage group conversations. This can be set up here: Settings → Messages → Share Name and Photo
