Hi there Scott in AK,
Thank you for posting to Apple Support Communities.
We understand you're getting an audio cut off when your iPhone is paired with the car's multimedia. We can help.
Have you been able to test to see if the issue continues after restarting your iPhone? Restarting iPhone is a great, first step in troubleshooting:
- "Press and hold the side button until the power-off slider appears.
- Drag the slider, then wait 30 seconds for your device to turn off.
- To turn your device back on, press and hold the side button until you see the Apple logo."

As far as pausing Siri before statements, you can leave Apple feedback about this behavior, as it cannot be changed: Product Feedback
If you've restarted and the issue continues, make sure that iOS is up-to-date on your iPhone. Before updating, we recommend backing up your iPhone first. These articles can be of help. When you back up, you can back up using a Mac or PC rather than iCloud if you choose.

Then, test if the issue continues.
If the issue still continues, we suggest re-pairing the device with the car's multimedia. See the section "Unpair a Bluetooth accessory" here: Pair a third-party Bluetooth accessory with your iPhone or iPad - Apple Support
If you're still having an issue, it is recommended to contact Apple Support: Contact Apple Support
Take care.
