Since the iPad backs up to iCloud daily the current backup does me no good. I need a backup from 3 days ago. How do I do this?
Restoring on the device only uses the most recent without an opportunity to choose an older backup. Connecting to iTunes doesn't show any of the iCloud backups.
My son offloaded Minecraft and after reinstalling all of his worlds are gone.

I cannot see the backup/restore files when you log in to iCloud, only the ‘Files’. Maybe I’m missing it, but I doubt it. The backup page in settings says I can restore the device. Not a few files. (See image)
Offloading clearly states that it won’t delete files associated with the app, but it still deleted all the world files for Minecraft. I now have an anxiety ridden special needs son in a 24/7 meltdown cycle. Hundreds of hours of work, lost.

Consider that data/files stored in iCloud storage are not included within the iCloud device backup. As such, the potential issue that you infer might only be an issue for files/data that you only store locally on the device - and not in iCloud.
For files that are stored in iCloud, if deleted, they will remain recoverable - as will deleted locally stored files - using the Recently Deleted folder within the Files App.
So, if a file is deleted on Monday, and nobody noticed on Tuesday, there's no way to get it back on Wednesday?
I can't even express how useless that design is.
iCloud backup is incremental. After the initial backup, subsequent backup cycles will update the iCloud backup with new or changed data. The restore process is intended to return the iPad to its last backup state.
How can I restore an older iCloud backup to my iPad?
