Do all of your subscriptions get shared when I add a family member? I really just want to share one subscription with a particular "family" member, not all of my subscriptions. Am I able to do that?

It isn't granular. A shared subscription to, say Apple TV+ or Apple Arcade, gives the other family members access to those services. There is no impact on what you see in your subscription, you won't see what they watch or play, and vice versa.
