The M2 Mac mini Pro can have one display on the HDMI port and two displays on the Thunderbolt/USB-C ports.

Personally I would go with a USB-C to DisplayPort cable to the 27M1F5500P 2K 240Hz

for example > https://www.amazon.com/dp/B09M38CXZ3/ref=sspa_dk_detail_0?

Then perhaps a second USB-C to DisplayPort cable to the 276E8VJSB 5ms 60Hz

instead of paying for a higher quality premium certified HDMI cable.

USB-C to DisplayPort offers more res. and refresh rate options than HDMI.

Visit "Display Support" for the M2 Mac mini Pro, at > Mac mini - Technical Specifications - Apple

Then check out the M2 Mac mini Pro section, at > Connect a display to Mac mini - Apple Support

Note that you may need to replace the factory supplied cable with a premium certified HDMI cable or use a USB-C to DisplayPort cable, if the display also supports DisplayPort.
