SIM card switch from old to new iPhone
At which step shall I remove the SIM card from my old iPhone to put it in the new iPhone?

At any point. It doesn't matter when you do it.
You can do it before you set up the new iPhone, you can do it after.
Just take out the SIM card and place it in the new iPhone whenever you are ready to do so.
