how do i see my significant locations

You can't see more than the last two in Significant Locations.

Significant Locations is not a back track feature. But more of a closed database, which is used to offer you, for example, navigation routes, depending on where you are staying, and other things.

If you need to track your movements around in the future, you can use Google Maps, which offers Location History. There you can track everything and see your routes on a map, day by day.

If you choose to allow Google Maps to use your location all the time, it should work all the time. When you have 3rd party apps to track your location all the time, every few days you will be asked to confirm whether the app is still allowed to track your location non-stop.
