Signed up for MLS season pass on Apple TV. Tried to watch some of last seasons games/highlights and the quality is shocking. Other apps that I have that stream (Peacock, Fox, ESPN) will reduce the quality of bandwidth is low, but it is still watchable. Apple TV, shows excessive macro locking and green lines across the screen.
currently sitting watching a live game on Peacock with no issues at all, so I know my network is good.

kindly tell me what progressive rate the picture I attached is at. That’s not close to 720p. Streaming services provide a variety of bandwidth as part of the packet they send out, with your device switching to whatever it can handle best. If Apple are sending that out as a lower bandwidth option, that’s a disgrace.
As mentioned, I tested Peacock, ESPN and Fox as well, and all were ‘good’ quality and watchable.
Pretty sure anything from before today was still recorded in 720p from back when ESPN was on the deal. I'd wait a couple weeks to see this week's games before judging too hard.
