Figured it out… checked the reminders app on iCloud.com and on my Mac, they were still there. I had to sign out of iCloud on my iPhone and sign back in. They then synched properly.

Have you recently changed the Apple ID that you usually used to log in with?
Have you removed any email Account other than iCloud that stored your reminders?

No, I did not. Apparently this had to do with recent software updates by Apple, seems to be a common issue. No changes on my part other than software updates that caused my reminders to disappear.
