How can I find a solution to go back before installing the update … and not loose my datas (files etc)?

—If at the beginning of the installer— you quit like any other application from the drop down Installer menu>Quit or Command Q
Let it run its course, there are several shut downs and restarts, this can take up to 45 minutes easily...
—If it has truly stalled at the end simply force quit if necessary and reboot as normal—typically there is no issue and the new macOS is loaded as expected.
force quit a shutdown by holding the power button/TouchID down for ~6-10 sec.
