The challenge you have is the interface of the old VCR or camera. You likely have S-video or RCA out. You will need to look for an ADVC converter through aftermarket channels as I don't think anyone makes these anymore. Back in the Blue & White G3 days, these were very popular products, allowing the capture of analog video over Firewire. In theory, these products, like the stuff from Canopus, will still work with modern Macs as long as you have the bandoleer of adaptors at the ready. For example, you would need a Thunderbolt 3 to Thunderbolt 2 adaptor (Thunderbolt 3 (USB-C) to Thunderbolt 2 Adapter - Apple.) Then the Thunderbolt 2 to Firewire 800 adaptor (Apple Thunderbolt to FireWire Adapter - Apple.). Then a Firewire 800 to 800 or 800 to 400 cable (or 800 to 400 adaptor with a 400 to 400 cable), depending on the output interface on the ADVC convertor box.

Both iMovie and FinalCut should still support this type of ingest.

Hope this is helpful. Research and investigation is needed.

I personally use a Narvitech Saturn NV100C to connect the VHS player to my Mac. and it then uses QuickTime Player to save the movies to my Mac. and if I want to burn those videos in a format that will work in a stand alone DVD player, I use the free app called Burn.

and please note that the specific video capture device I use is not compatible with Big Sur or later. I just provided that link to illustrate what type of device you need.

VHS tape transfer.
