The podcast banner (the one I'm listening to OR last listened to) appears on my lock screen. How do I prevent this and just show the screen I have selected under Setting - Wallpaper. Mainly, I only want my selected wallpaper as I don't want to display my listening preferences for privacy.

It is not possible to remove the play widget on the Lock screen when something is playing, e.g. Podcasts. But you can minimize the Cover Art that appears on the lock screen. Just tap on the large image and it will be minimized into the play widget.
