Hi. I would like to add apple care on my iPhone 14 pro max but I can’t do it through the phone could you please help me?

An AppleCare Plus Plan can be added by subscribing within 60 days (from the date of purchase).

See this support page about that:--> AppleCare Products - iPhone - Apple, (specifically, the section "How to buy" at the bottom).
