Have you verified that Ear Tips are the best ones for your ears with the Ear Tips Fit Test? If not, let's start with that: Choose your AirPods Pro ear tips and use the Ear Tip Fit Test - Apple Support
If you're not sure about the fit, try the Ear Tip Fit Test
You can use the Ear Tip Fit Test if you're not sure that you're getting the best possible sound quality and noise cancellation. Choose a comfortable fit with a good seal.
- With your AirPods Pro in your ears and connected to your iPhone or iPad, go to Settings > Bluetooth.
- Tap the More Info button
next to your AirPods in the list of devices. - Tap Ear Tip Fit Test. If you don't see the Ear Tip Fit Test, make sure that you have iOS or iPadOS 13.2 or later.
- Tap Continue, then tap the Play button

If the test suggests adjusting or trying a different ear tip, try adjusting your AirPods Pro and testing again. Then try a different size. You might need different sizes for your left and right ears.
Then, check to make sure that your AirPods are not in Transparency mode as it sounds like they could be. While using your AirPods, follow these steps:
Switch between noise-control modes on your iPhone or iPad
1. Open Control Center on your iOS or iPadOS device.
2. While wearing your AirPods Max or both AirPods, touch and hold the volume slider until you see the additional controls.
3. Tap the Noise Control icon
in the lower-left corner.

4. Tap Noise Cancellation, Transparency, or Off.
